On Thursday 13 August, we host a supper club with ex-Kiln Head Chef Karla Knowles as part of a collaborative summer dining series at 61 Charterhouse St, Farringdon - the future home of her new restaurant opening this autumn. Founded by Karla alongside Romain & Edouard Bourrillon, the series brings together some of the hospitality industry’s most exciting chefs ahead of the restaurant’s launch.
THE CHEF
Karla has built her career over almost ten years in some of London’s most acclaimed kitchens. She began at Tramshed, Mark Hix’s iconic Shoreditch restaurant, before refining her style at Petersham Nurseries. Most recently, she served as Head Chef at Kiln, where she became known for her fearless approach to flavour and ingredient-led cooking over live fire. Throughout her career, she has forged her own path while championing diverse, balanced kitchen teams, earning a reputation as one of London’s most exciting chefs.
THE INSPIRATION
In April, Karla travelled through Bangkok and northern Thailand, exploring the layered flavour profiles and techniques that continue to shape her cooking. From Chinese influences within Thai cuisine to its more contemporary, experimental approaches, the journey became a major source of inspiration for both this summer series and the restaurant opening this autumn.
Her restaurant opens later this year - AREE, a fire-led, Thai-inspired restaurant, with the second site in Notting Hill scheduled for early 2027. Both restaurants are founded by Karla Knowles, Romain & Edouard Bourrillon, and form part of the Maisons Vivantes restaurant group (Cocotte, Casa Felicia, & Jusu Brothers).
THE MENU
The menu opens with a Cornish crab and summer fruit miang, followed by pork-stuffed squid with nahm jim. Smoked jowl comes next with Flourish herbs, fennel and rhubarb, alongside stir-fried mushrooms and aubergine with chilli, before an aromatic coconut chicken and Corno di Toro pepper curry anchors the table. To finish, chocolate mousse with crispy peanuts and mung beans.
